£25 Doddington Cheese Board, Northumberland

North Doddington Farm is a mixed family farm in the Glendale Valley in the far north of Northumberland. It lies on the confluence of the rivers Glen and Till at the foot of the Cheviot hills. Each box will include 5 wedges of Doddington's Cheese selected from their range.

Darling Blue - Darling Blue and its salty notes complement a sweet digestive biscuit and the tartness of a fresh green apple
Doddington - C
lassed as a British territorial cheese, Doddington lies somewhere between a Leicester and a Cheddar. Exceptional flavours, most notably sweet caramel, and nutty characteristics
Berwick Edge -
Berwick Edge is like the traditional Gouda cheese still made by the Dutch farmers in Holland today. Made with raw milk and traditional rennet, this cheese is aged for 12 to 18 months to achieve its full and distinctive flavour
Cuddy’s Cave -
Mellow yet deceptively full flavoured with a lingeringly complex aftertaste. Made from our raw milk and traditional rennet, Cuddy’s Cave has a natural rind and is aged for 3 to 6 months
Admiral Collingwood -
This semi soft raw milk cheese rind is washed in Newcastle Brown Ale. This confers extra flavours as its characteristically pink rind develops. On tasting its buttery savoury undertones give way to an effusively complex aftertaste
Capability Brown -
Capability is a smooth and delicately flavoured cheese with hints of lactic and lemon. It has a white bloomy rind and is made from our pasteurized cow’s milk.
Smoked Cuddy’s Cave -
This cheese gets a 48-hour oak chip smoke, which slowly permeates in. The result is a succulent, smooth and creamy smoky cheese, devilishly addictive. Unpasteurised and made with traditional rennet.
